That’s because most ordinary carob trees are selected and grown to produce lots of seeds in skinny pods. The seeds are then used in industrial products and as thickening agents. The pods are a by-product, mostly used for animal feed.  Yet, it’s those same skinny pods that are used to make the ordinary carob flour we’ve become accustomed to.

But, this carob is made from carob pods grown on carob trees selectively chosen for their thick, sweet, delicious pods, not for the seeds.  And this makes a huge difference.
