These light brown beans with mottled marks in magenta are similar looking to pinto beans, but a bit larger. When cooked, the markings disappear, so they’re fun for kids who like to help in the kitchen. Like all beans, cranberry beans are an important staple in many cultures, because they are nutrient-dense and very versatile in cooking. These beans have a creamy texture and a thin skin, making them ideal for broths, sauces, and more. 15 grams of protein and 16 grams of fiber per cup! They’re a great source of folate, copper, manganese, and more.
Directions
Bring 10 cups water to a boil, add 2 cups beans, and boil for 2–3 min. Remove from heat, cover, and set aside for 1–4 hours. Drain and add to a large sauce pan. Add water until it covers beans by 1 inch. Boil for 10 min and simmer until tender (about 1–2 hours). Add seasonings such as garlic, onion, oregano, parsley, or thyme while cooking, if desired.
